Healing Soup

Sorry for the delayed post, both my fiance and I were out of commission last week with the flu-ugh not fun! We were living like mole people and did not leave our apartment for four days straight. Good times. When I started coming out of my fever-induced malaise, I made this soup (recipe via Gluten Free Goddess) – just what the doctor ordered! Not only is it healthy and a beautiful color, it’s also vegan and gluten-free. Since I was out of onions and there was no way I was attempting the reaaallly far two minute walk outside to the store, I substituted shallots and 4 small-ish carrots in their place. I liked the result so much that I think I’ll make it a permanent addition to the recipe!

If you don’t have an immersion blender, do yourself a favor and get one! I have this one and use it all the time! They are cheap and make soup-making very quick and easy.
