Jazzed Up Watermelon Mint and Feta Salad

Here’s an easy and refreshing salad recipe that I love because it tastes like everything summer. It’s my version of the classic watermelon mint feta salad with added flare -greens and some spice (of course!)

It’s also great for staying cool in the heat. In Ayurvedic nutrition it is encouraged to eat all six flavor profiles or “rasas” at every meal to create balance – this recipe has them all! Here’s another great link for more rasa info.

Summer Watermelon Mint and Feta Salad 

Serves 2-4

Ingredients:

2 cups watermelon, diced into about 1/2 in. cubes
3/4 cups fresh peas
2 Tbsp. chopped fresh mint
1 cup pea shoots (or any other salad green you like)
3 Tbsp. feta cheese, crumbled or diced into 1/4 in. cubes
1-2 Tbsp. pickled jalapeno (you can find these in any grocery store), small dice
2 Tbsp. lemon or lime juice (any wine vinegar also works well)
2 Tbsp. extra virgin olive oil
sea salt and freshly ground black pepper to taste

Directions:

1. In a small bowl whisk together oil and acid (either lemon/lime or vinegar) and season to taste with salt and pepper.

2. In a larger bowl combine peas, pea shoots, mint and jalapeno (sometimes I also add a small splash of the jalapeno liquid). Toss with dressing.

3. When ready to serve, *gently mix in watermelon and feta. Enjoy!

*Otherwise the feta breaks up and creates a not so pretty cloudy glaze over all the beautiful colors in the salad.
